Purpose and Function
Glucose oxidase is an enzyme that catalyzes the oxidation of glucose to gluconic acid and hydrogen peroxide. In food production, it is used as an antioxidant to extend shelf life by preventing oxidation. It is commonly used in baked goods, egg products, and beverages. Glucose oxidase also helps improve dough strength and stability in baking.
Outside of food, it is used in medical diagnostics and biosensors for glucose monitoring
Potential Risks and Side Effects
Glucose oxidase is generally safe for consumption. However, excessive intake may cause gastrointestinal discomfort in sensitive individuals. Occupational exposure to the enzyme powder may cause respiratory or skin irritation.
