Purpose and Function

Proteases are enzymes that break down proteins into smaller peptides or amino acids. In food production, they are used as stabilizers and flavor enhancers, particularly in meat processing, cheese making, and brewing. Proteases tenderize meat, improve dough elasticity, and enhance the flavor of aged cheeses. They are also used in the production of protein hydrolysates and dietary supplements.

Outside of food, proteases are used in detergents, leather processing, and medical treatments for wound debridement.


Potential Risks and Side Effects

E1101 is generally safe for consumption but may cause allergic reactions in sensitive individuals. Overuse in food processing can lead to overly soft textures or bitter flavors. Occupational exposure to protease powders may cause respiratory or skin irritation.
