Purpose and Function

Calcium bromate (E924b) is used as an improving agent in the baking industry, similar to potassium bromate. It acts as a dough conditioner, enhancing gluten strength and improving the texture, volume, and consistency of baked goods. Calcium bromate is particularly effective in producing uniform and well-risen bread products.

However, like potassium bromate, its use is restricted or banned in many countries due to safety concerns.


Potential Risks and Side Effects

Calcium bromate (E924b) is also considered a genotoxic carcinogen, with similar risks to potassium bromate. Studies have shown that it can cause tumors in laboratory animals and may pose similar risks to humans. Residual bromate in food products is a significant concern, as it can convert into potentially harmful compounds during baking.

Due to these risks, calcium bromate is banned in the EU and several other countries. In regions where it is still permitted, its use is heavily regulated to minimize residual levels in finished products.
