Purpose and Function

Ammonium persulfate (E923) is used as an improving agent in the food industry, particularly in baking. It functions as a dough conditioner, helping to strengthen gluten networks and improve the texture, volume, and consistency of baked goods. Ammonium persulfate is also used as a bleaching agent and oxidizer in certain food processing applications.

Outside of food, it is widely used in chemical industries as a strong oxidizing agent, in polymer production, and in cleaning products.

Potential Risks and Side Effects

Ammonium persulfate (E923) is considered safe for use in food in regulated amounts. However, it is a strong oxidizing agent and can cause irritation or allergic reactions in sensitive individuals, particularly when inhaled or exposed to skin. Ingesting large amounts may lead to gastrointestinal discomfort or more severe health issues.

Due to its chemical nature, it is handled with care in industrial settings, and its use in food is strictly controlled to ensure safety.
